Recipes passed down through multiple generations are the best. They bring a sense of connection to ancestors and seem to always get the “extra” ingredient of love thrown in to make these taste just right. Norwegian heritage entered the Michael family through marriage, but this quickly became a family favorite. Grandma Sponheim’s Lefse is a labor of love, enjoyed by all.
Makes about 18-22
5 cups russet or round white potatoes, peeled and diced
1 stick butter, melted
3 Tbsp powered sugar
1/2 tsp salt
2 cups flour
Directions:
Boil potatoes until soft, rice potatoes while hot into large bowl. Add butter. Cool in freezer for 1-2hrs, stirring once in a while.
Add powered sugar, salt, and flour.
Recommend using a rolling pin sock and pastry cloth. Roll dough into ~7-9in circles using flour if needed to keep from sticking.
Place on lefse griddle at 450 degrees and flip when sides have light brown marks. transfer to wire rack to cool. Repeat. Freeze lefse or serve immediately.
